I am grateful to my best friend “Angie” for this nice recipe. I loved the taste of cake despite being egg-less. The flavor of carrot and orange tingles ones taste buds. The preparation is very easy and needs very less time and hence can be baked just before coffee time.
- 1 cup grated carrot
- 1 cup oil
- 1 cup orange juice
- 1 cup sugar
- 3 cups cake flour/ maida
- 15 gm ( 3 tsp) backing powder
- 1/2 tsp orange zest
- Preheat oven at 175°C
- Mix all the ingredients in a mixing bowl
- Pour into a greased baking pan. Bake at 175° C for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
